I have replaced the coolant bypass valve on both 9-5's I've had. Both times I had to top off the reservoir a few times over the next week or so as the air worked itself out of the system. Make sure you top it off to the "KALT" (cold) line when the engine is cold. It's normal for the coolant reservoir to appear lower while the system is hot and pressurized. If the SID isn't yelling at you to refill the coolant you should be good.
Not sure what to make of the white stuff on the plugs. Sounds like you just need new ones.
Cranking slowly? How old is your battery? And in WI I bets it's getting chilly. If you have an old battery it's probably tired and the cold exacerbates that.
