That's why I don't think it is a thermostat problem but also keep in mind that it is a multitude of levels of bad/cracked head gaskets.
Like what I think is going on in your case is that you have a minuscule passage that allows combustion gasses to get pushed through into cooling system only at driving and under turbo boost.
You could probably leave the car idling for days and the system would work just dandy turning on and off the cooling fans without pressurizing the cooling system, but when the turbo boost kicks in, the combustion gasses manage to sneak by into the cooling system.
And that minuscule opening is not enough to push coolant back into the combustion chamber because the pressure is not high enough.
That was the case with the 9-3 the other week. He could drive the car 60 mile per day having to add coolant only when engine was cold and then it kept itself sealed when it was hot.
So that is only one possible theory among a whole bunch of other scenarios where the opening might be smaller or bigger.
