A lot depends on what you know of the car's maintenance history.
About the only job I definitely would do at the same time would be the thermostat, if only because you have to remove all (or most of) the manifold pieces to do either job.
Spark plugs are easily accessed, so they can be done any time.
But the big maintenance item on the 3.0 V6s from Saab is the timing belt and tensioner pulleys. If you don't have positive proof that it was done at the proper 60,000 mile intervals, or you're running past the next 60k interval, OR, they replaced ONLY the belt (which is what usually happens when you take it to Saab for your one "warranty" timing belt), then it's time to schedule that job, and if the car has gone past 90 or 100k, the water pump, too (common wisdom suggests replacing the water pump every second timing belt change, whether it looks like it needs it or not. They don't usually get to the third belt change, and you run the risk of leaking coolant slipping the timing belt in some cases.).
Be careful, though, because you want them to replace the belt AND the tensioner pulleys. You can replace the belt, but if one of the pulleys gets too old, and seizes up, that'll be just like the timing belt breaking, and you're into buying at least a set of heads, and paying almost what you paid for the car to have them fixed.
I bought a 2000 SE with the 3.0t this summer with 90k on it. Dealer records indicate they did change the belt at 60k, but nothing else. So, rather than risk a $5,000 repair, I'm having the belt, pulleys & water pump done next week before the car hits 98k.
The timing belt job does not, however, share much - if anything - in the way of procedures with the oil cooler job. So, unless it's time for it to be done, you won't be gaining anything, except, perhaps, peace of mind, by having the belt & pulleys (and water pump!) done with the oil cooler.
