The eight hours sounds right for a D-I-Y'er from reading owner posts here but a pro should be faster due to experience and assortment of right tools. I just checked and found GM Goodwrench complete oil cooler kits on eBay for $260 to $320.
Best to get a second quote. $125 per hour for labor sounds steep too. Based on parts prices I saw, using 5 to 6 hours for labor time, and ~$100 per hour, should give a price around $1,000 to $1,100 for this job.
