Well, if you just replaced the springs and it brought the ride height to spec, I would be surprised. I have done this with OEM New Springs and the ride height is still low on Aero and Non-Aero cars. So spring lifts / spacers need to be used and is by far the cheapest / easiest solution. Have done this on 10+ cars now and ride height is holding and the cars take rear riders much better than stock.
Bump Fishtailing means you have a bad shock in the back no matter how they seem to be. One side is recovering before the other. I imagine if you had a real spring failure (have not seen this yet) it may cause it, but almost always it's the shocks. If you have it apart, replace the shocks anyway unless they are very new. I would not leave any shock in that is 80k+ on them.
Cupping is the result of camber / tow issues because the ride height in the back is too low. As the car turns and the weight goes to the outside of the turn in the back, the tow and camber are adjusted mechanically as the weight (Gs) force the outside ride height down. So, if it is down all the time, they are off and tires will be worn out. Typically inside tire wear with or without inside cupping.
