Sure, anything can be done. It's just a matter of time and money.
Mating to the transmission would be a bear. It's not really a standard bolt pattern, except maybe for some European Opel/Vauxhaul engines, so there would need to be some custom adapter plate or bellhousing engineering. It might even be easier to rip out the floor and convert to RWD.
But honestly I think you are romanticizing the old engines. Take away amm, map sensor, and CPS and you have to replace them with a carburetor and a distributor - not the most trouble-free pair of mechanisms ever devised. Less expensive, yes, but not trouble-free. Needles, jets, floats, points, condenser, advance curves...no thanks.

Also, not sure where you are but good luck getting such a bastardized car past emissions testing.
Anyway, it's sad, but these cars are now considered simple compared to anything you could buy new today. Plus, there are lots of parts showing up at junkyards that make them not so hard to keep running.
