Next time when the light stays on I would check the headlight relay for low beam in engine compartment relay box.

Carefully lift the cover off and locate the relay and put your fingers on top of it a gently wiggle it back and forth and if it clicks and lights turns off, it is probably a bad relay.

If you can remove the relay and light stays on, you have a bigger problem.

If the light comes back on when you plug the relay in again, you also have a bigger problem that could be multiple things including an ignition switch that stick on.
