To answer a few of your questions,
The Oil pressure switch will connect to ground when there is no oil pressure, if the switch is unplugged or the wire is cut the oil can light will never come on, even when you just turn the key to on, when everything lights up. I always check to make sure that little oil can lights up before i start the car, then i know that its all connected and good to go.
I would check to make sure that you didnt damage the wire of the new switch when you installed it, if it is chaffed or dangling then it could be grounding out to some thing metal near its home and triggering the light.
If that's not the problem and you do drop the sump, use the permetex Anaerobic sealant,
The fact that the light was not coming on consistently every time she came to a stop or was at idle makes me think its not sludge gremlins, but it very well could be. When my 9-3 had sludge in the screen that oil light popped up EVERY time i came to a stop or let it drop below 1000rpm. I immediatly dropped the pan and found the land of the sludge...
Also props to your daughter for taking the low oil pressure light seriously.
