It is not a re-calibration of the acceleration tables. It takes almost no time for the car to relearn its fuel trims. A few miles with good accelerations up a few hills will relearn it. I would guess that this hesitation and misfire it either a mass air flow sensor failing or a rather large air leak. You do not want to drive the car for any prolonged time with the misfire it could melt the catalytic converter. I guess it would be wise to check the plugs make sure they are the proper ngk's and the di cassette.
Hard acceleration at about 2500 should have the turbo fully spooled up. When this is happening how high is the boost gauge going? The boost gauge in your car does not work from a pressure sensor it goes off the amount of air entering the engine. It should be near the red under heavy acceleration.
I would have your mechanic check the mass air flow readings at idle and under load. I would also have him smoke test the intake system for leaks. Have him test the manifold as well as all the air inlet hoses including the intercooler. I have seen an intercooler with a split side seam that would only leak at close to full boost.
