Same thing has happened to me a couple of times on two different 9-5s. Exactly the same symptoms. Temp gauge goes dead when the temperature reading is out of the expected range.
I just replaced my T-stat, Temp sensor, and the coolant bypass valve a couple of weeks ago. Out here in California, I "fought" temps in the high 30s when I did it. It wasn't bad, and it only took me a couple of hours for the whole thing.
(It's raining today, but we had a dusting of snow yesterday. Up the hill, the ski resorts have already surpassed last year's total snowfall amounts. Many of the resorts will end up with another 30-40 inches after just today and tonight.)
