I ended up purchasing the "Super Z" brand of supposedly very low profile Z style cables; they fit on the 205/55 16 tires and were easy enough to install, though the limited access around the tire in the wheel well made it a messy job given the wet conditions! I didn't have a noticeable problem with rubbing fender liners, but I didn't drive very far with the chains on.
In this case, although Caltrans required chains, the roads were bare. As a result, the ride was very rough... bouncy at slow speeds, and almost violent at moderate speed (the dash was shaking vertically in a concerning way). I decided to keep it really slow and after a mile, we discovered chain control was lifted and I pulled over to remove them. They come off easier than they go on!
After that experience, I don't want to use chains again for fear of the damaging the car. I wonder if it would have been less bad if it hadn't been the z-cable style, or if there had actually been serious snow on the road, but either way, I definitely don't want that experience again.
Caltrans evidently permits the "Autosock" as a traction device and I think it would behoove me to keep both those and chains in the trunk ... that way, when there is chain control but no actual snow, I can put the Autosock on without fearing damage to the vehicle.
