Or a little grease can hold the gasket.
But really, round cross section "O" rings are designed to hold pressure. Fluid enters from the high pressure gap and forces the rubber to try to extrude through the low pressure gap, which seals it. The rubber is round so that it can "roll" inside the gap. In the valve cover seal, pressure is so low that the rubber is in reality used as a compression seal, and a rectangular cross section would work just as well. And could be held in place with a few dimples cast into the valve cover itself.
