Jeff, I think Saab carried the 9-5 base over into MY 2004 and 2005 as a wagon only, in a fully decontented version. The V6 was dropped and the Arc became a model with merged base and old Arc and Aero components. My impression is these limited numbers of 2004 and 2005 wagons were "strippers" with minimal options and features.
The 2005 9-5 Arcs and Aeros all have foglights and almost all the features your 2000 had. The big thing they deleted that distressed me was the Weather Radio function. Otherwise, for me, I thought where the materials changed when the 9-5 got its first re-do got better.
Now, in 2006 the car was reworked a second time. Cheap plastic inside the doors, much less impressive sound system. But conversely they got rid of the disintegrating antenna mast and failing pixels on the console. The number of CELs you will get on a 2006 or later is almost always less. The handling could be described as better - the main thing is the rear tire wear (on the inside) is reduced.
I've got trim on the inside of my 2001 that's crumbling but looks fine on both 2004s and the 2006 9-5s we have.
It is a mixed bag, basically. I guess you could say GM could've tried 100% to make the car better but instead we got a blend of better and cheaper.
