I also disagree -- the thermostat operates dynamically to help regulate temperature. When the engine is cold, you are correct, the thermostat opens within a few degrees of its set point, ultimately being fully open when the temperature is high enough. If the coolant temperature begins to drop below the set point, the thermostat will start restricting coolant flow, allowing it to come back up in temperature.
So, a 192 degree thermostat will open later and close sooner if the temperature drops than a 186 degree one, ostensibly keeping the engine at 192 or higher.
The 186 degree one will open sooner (starting cooling sooner) and will take longer to close again, arguably allowing an efficient cooling system to keep the overall temperature a little lower.
The real debate is will these relatively few degrees make any meaningful difference in underhood temperature. But that's just my view, and I live in the Northeast and don't have the compounding effect of the extended extreme heat that other parts of the continent get.
