I agree, definitely data logging, not observation on-the-fly. Comparison of the MAF values at warm idled should be good.
The reason for my comment about having a good baseline is that the infrared test for nitration will assume there's nothing in the unused oil that interferes with those nitro bands in the spectrum - probably a reasonable assumption, but still an assumption. The main problem with nitration is that it will eventually help promote degradation of the oil in the direction of sludge. But if your oil change interval is short enough, then this process may never really get far enough to be a concern.
