If you are planning on keeping the car, I would do as much as your budget allows.
Someone experienced with the Saab 9-5 is highly desirable. There is a list of mechanics maintained on this site but it might be long in the tooth in light of Saabs bankruptcy.
New alternator, probably Bosch? The correct output I believe is important.
New water pump and hoses. Can be tricky with o-rings. Read the advice on the site so your mechanic knows.
Belts and pulleys are inexpensive. Use the best you can afford which might mean OE though there are alternatives and OEM recommendations on this site.
Oil pressure - yes. PCV line back there too yes. I would replace both battery cables but the +ve is the usual issue. In fact, maybe the +ve cable is your problem???? Corrosion can be internal/external and hard to see. Apparently copper was pricey in the early to mid 2000's
Motor and transmission mounts at your mechanics discretion. Being an Aero, it has a harder suspension which may accelerate wear. The general condition of the roads the car has travelled on is a major factor. Bad roads = shorter lifespan.
