Timothy, I like the cruder but more reliable Climate Control systems on the 2006 and newer 9-5s. I also like not having to worry about the readouts on the central panels losing their pixels (not an issue on 2006 and newer). You should avoid the Parchment leather seating on the '06 and newer 9-5s as it doesn't wear well and tends to look like rubbish by now (while an Edwardian gray interior on an '04 Arc with more miles, might be near immaculate).
Another approach is to look for Southern cars. None of my 4 9-5s have any rust on them, and it seems like every time I look at a Wisconsin or Massachusetts 9-5 (any age) it often has dogleg rust. But remember, Southern sun does not play nice with plastics.
About Saab 9-5 paint getting worse, after '06: The only one of mine that needs repainting is a red '01 Aero. Early water borne paints (particularly red) didn't do well. I had a red '85 and a red '94, no issues.
