A code that points to a bad temp sensor can often mean that the thermostat has failed in the open position. I always replace the t-stat along with the tempt sensor. They are adjacent to one another, so it's easy to take care of both of them, "while I'm in there"! (I currently have to do this to my '03 Aero wagon, but it's less pressing in the summer heat!)
When the t-stat fails open, the coolant takes a very long time to warm up, and the computer doesn't expect that, so it assumes that the temp signal is incorrect because it is out of a predetermined acceptable range. That is what makes the temp-gauge needle drop (the computer shuts down the gauge since it doesn't trust the information it's receiving, and it should draw your attention to an issue). This has happened to me at least three times on the four 9-5s I've owned.
I might also double check the ground for the temp sensor...
I can't say from experience that the coolant gauge/temp signal will interfere with the CC, but perhaps it does.
