Thanks for the reply - That's a good question. I am likely very confused. My brain hears 'gasket' and thinks rubber vs. a 'washer' being metal. And from what I could tell, the washer on the drain plug was the same metal as the plug or at least the same color (i.e. not copper).
I just looked at the thread linked below, though, which I didn't see earlier when I searched.
It looks like there are two different gaskets/washers - copper or rubber-ringed aluminum.
On second viewing on eEuroparts, all of the products they list as 'gaskets' identify them as copper. I think part of what confused me is that they sell 1 for $.43, another single item for $8.89 and a set of 3 for $9.99.
I also found the filter kit which contains the 'gasket' at SaabUsaParts which looks like the same copper. Kit is $12.99 including the filter so that's what I'll buy in the future and just change it each time for good measure.
