Some of these items don't add up: Brake pads don't really "scar", they wear down. If your rotors are scarred it's because the pads were worn to the metal. Front pads are a common replacement item on FWD cars, rears hardly ever. As mentioned, so long as the rotors aren't warped or worn beyond the minimum thickness, a pad replacement is all that's needed--a simple DIY job.
"Clutch hard"?: Hard to press the pedal? Has the brake & clutch fluid been routinely bled and refreshed using the correct fluid? If so there's little liklihood that your clutch is worn out through normal driving. Maybe it's the old Saab master cylinder bugaboo that's been a problem ever since the model 99. Saab makes very sturdy clutches which can easily go far over 100k miles. 50k service life being common is false, period. You are being lied to.
If you really do need the full cat-back exhaust and not simply the rear muffler (and what evidence is there of the entire system needing replaement?) get the Saab lifetime warranty SS system so you'll be covered in the future. I've heard of rear muffler problems w/ the new Saabs, but for the entire system to be failing is very unlikely unless you're routinely taking short trips and/or live in a salty environment. Again, dubious.
Drive belt replacement is simple, preventive maintenance that's well worth the bother. Also get the cooling system flushed and a new thermostat.
In sum, I'm very suspicious that you're being taken advantage of--if they are lying to you about Saab clutch life, what other untruths are you being given? I would strongly recommend that you get the proverbial second opinion before spending another shilling with these people.
