I'll be the first to admit I don't fully understand the physics of it - I just know it to be true from experience. But I don't think it takes a lot of energy for water to vaporize up to the point that the surrounding air is saturated.
I will ask around though - I work for a pneumatic automation company so someone around here should have a clue...
