What you are referring to is an issue with dino oils that uses viscosity imdex improvers to cover the wide gap of oil weight. VII's are not used or used very little in synth oils. There are no worries with 0W-40.
Mobil One 0W-40 is one of the most sophisticated oils in the world; it's as cutting edge as you can possibly get in a motor oil.
One reason you see these oils in European cars is the desire for long drain intervals on their side of the pond. Auto makers want long drain intervals to lower maintenance costs and oil makers have to respond with products that meet these specs.
