I don't know of any one-stop resource with a comprehensive comparison among these variables, but here are a few tidbits:
If you want a stick you'll have to stick with 4cyl, the 6's are all autos. There were a few important drivetrain upgrades for MY2000, so I'd focus on that year. An Aero will be hugely more entertaining than the LPT4, but you can get either a Saab or aftermarket ECU upgrade for the 2000 LPT that will help on the performance end. It won't get your the Aero suspension, though. FYI there were a few SE LPT 4 manuals sold in 1999, but they're extremely rare. In 2000 all SEs were V6.
Generally speaking, manuals are hard to find, wo be prepared to invest some time finding just the right car, prefereably one with service records so you know it's had adequate oil changes.
