Fuel pump, crank shaft position sensor, ignition module/amplifier are some parts that could create this.
It's completly impossible to say which one it is if it doesn't fail at the shop.
What the shop can do is to hook a lab scope and a milli amp clamp up to the fuel pump and study ripple pattern of the fuel pump commutator when the engine is running.
By doing this they can either rule out the fuel (because the ripple pattern is good) or suspect it if the amp curve/ripple pattern is very disturbed.
My biggest guess goes toward the CKP sensor though. If the car stalled out at the shop they would be able to pin point it by hooking the lab scope up to the sensor wires and studying the pattern. It can create a gap in the pattern like the picture below (hesitation), or flat line (stalled engine).
If the car refuses to stall at the shop, it's not much they can do except replacing parts hoping to find the right one.
