The work of disassembling (and totally disabling) your parts car just to get a used disk, even if it's still got full meat on it, is hardly worth it unless you're sitting around with nothing better to do. You can buy, brand new, a disk ONLY, through a Saab dealer or one of the on-line sponsors of this site, at fairly reasonable cost.
I'd personally recommend the OEM disk. I've seen aftermarket ones come apart on various brands of cars thru the years, recently a Valeo brand disk on a Saab that was not being abused.
Most parts places including NAPA want to sell a clutch "kit" including pressure plate, clutch disk and throwout bearing. I'm personally a fan of re-using parts that aren't likely bad - - pressure plate; don't bother turning a clean smooth unabused flywheel; pilot bearing if it's still rolling smooth since it only spins when you have the clutch pedal depressed (you can drill thru its seal with a tiny drill and use a grease needle on a grease gun to re-lube with a tiny bit of grease, then seal the little hole with a dab of silicone; it's easier by far than removing the flywheel to replace the pilot bearing); even throwout bearing, re-lubed with STP or chain saw bar and chain oil. If you do replace the throwout bearing, go with OEM. (It also gets use only when the pedal is depressed but it takes a heck of a lot greater load than the pilot bearing.)
You can if you want pull the parts off the other car, and it may be worth it if you're sure they're nearly new.
Do a search on this site for posts on clutches for tips on the whole routine, besides the Townsendimports link you have.
