It's not your sway bar bushings - these will not cause the car to steer improperly if broken - "dance" as you put it. If you have a broken shock, it's plausible that having an undamped spring on one side of the car would make it do funny things.
If the car's steering has a mind of its own when you hit a bump, your primary suspects are tie rod ends, or a arm bushings (lowers more likely then uppers). Less likely are ball joints (they wear slowly, don't just suddenly bang about and cause steering problems). Back to shocks: if you jack up the car, the suspension travel is limited by the shocks so it can be hard to tell if there's something wrong with the shock when all of the suspension weight is on the shock's travel limiter.
Knowing direction the car goes in when you hit an irregularity would be helpful, as well as if it happens when you hit a bump on one side of the car only.
