...for the headgasket alone by a skilled mechanic using power tools. (less time if manifolds are already off, and more hours if on). YES, they can go ahead and check for flatness too. As the head will be out for headgasket, the added time is negligible if the head is flat. If it needs to me machined, add 4 hours +/- 1 hour. If the block is warped, you need to make a decision as the block should be disassembled to machine it flat. (although I guess you could tape of or fill all holes and machine it, but that is a super bad idea.

Mostly, I have never checked for flatness. Perhaps it has been taking a chance, but I always pull the head, strip the old gasket and use OEM to replace. My indy and I even re-use the head bolts (even though I would NEVER do this on a V8). While I know it is bad form, I have had no issues. I used all the cars in question as daily drivers, and never built them up over 220 hp, so there was never any real strain on the long block.
