Anyone ever had a Saab appraised for insurance?

I just bought a 1990 Talladega Red SPG 5spd in excellent exterior shape. It needs a transmission very soon, A/C rebuild and some seat-stitching interior work...but as far as I know, it will be close to mint at that point.
I'm guessing it would pull between $5k and $6k once the work is done. I'll actually have more than that in it...but there aren't that many Talladega Red one's left in the world, so I'm good with that.
Book on the car is $832. If I could find them for $832 - I'd be buying them up all day every day. It's just whacked pricing that means nothing.
I'm going to insure it for an agreed upon appraised value. I asked the insurer who to have appraise it...they said "an appraiser". Yeah, thanks for that.
Has anyone had this done? Any contacts or suggestions? I want to be sure that the appraisal will come in at $5,000+ before I start the process. That's backward, I know, but we are starting to see these cars fetch some higher dollars than we used to.
Any help is greatly appreciated.
