Breaking in a motor + gas additives?

I've got a 1990 900Tc that's been sitting for five years, presumably due to a seized motor. The motor isn't seized, still don't know what's wrong, but that's neither here nor there.

I found a guy with a rebuilt motor - he rebuilt it, put it in his SPG, then the SPG's tranny died. He lost interest, pulled the motor, and sold it me. According to him, it's got less than 500 miles on it (I believe it - it's clean) and isn't broken in yet.

At the same time, there is gas in the tank of this convertible that is now five years old. I'm planning on draining most of the gas out of the tank, but I'd really prefer not pull it unless absolutely necessary - with sealed fuel systems and plastic tanks, gas seems to do okay even when stored for a long time here in California. I am thinking about throwing in some gas additive (Berryman's, et al) to help clean any gunk that may have formed on the pump out.

Two questions:

1. What is the recommendation procedure for breaking in a new motor? Standard no full throttle/low rpm thing?
2. Any chance a toxic chemical in the gas tank would adversely affect new rings, etc?

P.S. Still haven't taken apart the old "180 degree" motor... It's on its side now, and I can't see anything obstructing the pistons or crank. From underneath, it looks like the head gasket is brand new. Combined with all the mismatched hardware on the engine, I'm almost positive someone did some serious work on this car, just did it wrong. :)
