Do to my financial limitations over the years (student) I have run several cars without PS. They ranged from small Japanese cars (Datsun B210 hatchback) to a 1966 Mustang with no ill effect. It is true that it is harder to turn a wheel at very low speeds. But otherwise it's not an issue.
There was a flagship model of a Subaru (can't remember, it might of been the SVX) that had variable speed power steering. It altered the ratio of turns to move the wheel so it was consistent over a larger speed range. I don't think it is used any longer.
It's an issue of convenience, that's all. And if your rack is shot, it is better to disconnect it. Otherwise you'll lose money over time refilling the thing. You can also exacerbate any damage to the PS pump if you are careless and run it dry.
Don't sweat it, cut the belt and eat some pizza. That's what I say.
