As turbocon86 notes, the chain guide is on the underside of the valve cover. It's just a rubber block that dries out and shrinks over time. Nice to replace while you're at it.
As to the gasket falling off, I use gasket cement on the cover so the gasket doesn't fall off. You should also use a gasket sealer - I like Loctite 518. It isn't always easy to find, but it works very well. The other trick to know is the bolts have a very light torque setting - only 11 foot-pounds. Not a lot of torque wrenches go down that low. You don't want to over-torque them.
