MC900t said almost exactly what I was thinking. You probably have a large vacuum leak and make extra sure that those black ground wires are securely attached with two bolts, just as they were, near the thermostat housing. When you detach the AMM wires you are just putting the engine in limp home mode so the ECU injects fuel using a map instead of sensor input. A damaged intake manifold gasket can cause a giant vacuum leak that can be tricky to detect and will cause the symptoms you are seeing. You can flood carb cleaner along the top edge of the intake manifold/head joint while it's running fast and see what happens but if the damage is on the lower edge of the gasket you might not find it that way (you have to flood the stuff upward onto the joint).
