A high end lumber yard for furniture and instrument making should carry walnut burl veneer. It will be expensive, fragile, and hard to work with. A solid piece will be even more costly! Unless you are trying to match an existing piece already in the car, I would avoid staining and keep it simple on the finishing - personally I prefer matte vs gloss to avoid reflections/glare. That is in keeping with SAAB philosophy. 2002 9-5 had a nice matte finish, but some others had glossy... Various trees/burls will have different colour characteristics anyway, so any staining to match would need to be very customized! Best to do it all at once from 1 piece. I have a fair bit of woodworking expertise, so I have considered this before as a fun project, but have yet to pull the trigger. Be aware, veneers can be tricky to glue especially to differing materials (eg aluminum) as wood movement is a factor, and coefficients of expansion and contraction will vary for the materials (noting wood is more humidity than temperature sensitive and more so across the grain than along it - fortunately walnut is a relatively stable wood). Glue choice and setup (eg vacuum bagging) are critical.
