If you're asking whether you can trust the integrity of the wiring and insulation - I'd say most likely, and 'trust but verify'.
For example, try testing the connectors' wiring prior to removing them.
Using the prints in Bentley, find (for example) which pins on the ECU are the injector lines. Measure the resistance at that connector, and watch for changes as you wiggle/pull the connectors. If the resistance doesn't change, then you've just confirmed the wiring between the ECU and the injectors.
Same story for the AIC or other sensors.
As for the wiring itself, if the wire loom looks unbroken and unchafed, I'll be leaving it alone unless I'm digging in for another reason.
If it is degraded, I'll just inspect the individual wires' insulation at that point, and clean the grease off of it, then rewrap with split wire loom and 'real' (i.e., 3M Super 88) electrical tape. I'm just going to reduplicate the factory look.
And, of course, keep the strain and flex off the connectors by tieing the harnesses down.
