What's your goal in fabbing up a new harness? The design of the connectors and the quality of the wiring (at least of what I've seen on my '92) seems solid, the rubber strain-reliefs on the injectors excepted. Are you running into intermittent problems, or T5ing it?
Making a new harness seems completely possible, but on the scale of 1=oil change, 4=clutch, 6=head gasket, and 10=make all new body panels by hand, you're looking at about a 6 or 7, more like 8 if you're redoing the whole car.
Pins, sockets, connectors, and crimp and release tools are all available for a price for the injector harness, since they're still in common use. For the injector connectors, for example, I just noticed a plug on the power steering line on my '05 Escape that's compatible, but with a different backside.
