Unquestionably, the best guage that I ever installed was the voltage gauge. Lets you see if your alternator is failing long before you get stranded somewhere. cheap and easy to install (no send required - it just reads off the power circuit). The dashboard only provides you with an idiot light.
I agree water temperature is redundant. My gauges are voltage, boost(calibrated so I can set base boost). Wide-band)O2/mixture, oil pressure, and oil temperature. Only the boost is somewhat redundant. I used to have a fuel pressure gauge too, but either the gauge or the sender was bad, so it's in a box awaiting future re-installation.
Really, you don't want to be spending a lot of time looking at these gauges when you are driving - they are for quick glances to see that everything is fine or for diagnostic issues when everything isn't.
