No worries. As Bob notes the bars aren't really far enough apart but this is OK if you run lines from the bow and stern of the canoe to the bumpers or tow hitches. Just snug them down good, don't make them super tight.
An 18' canoe is longer than the car so the ropes/straps shouldn't hit your paint. Ratcheting tie downs are fine, but I've hauled kayaks, windsurfers, lumber, and a 135 lb 13-foot Laser sailboat using webbing straps with a cam-type latch. Just stop and check it after a few miles on the road as stuff always loosens up.
You'll definitely notice a canoe in a cross-wind, but it should be OK otherwise. Gas mileage will drop.
What do you mean "pieces of a roof rack?" Saab racks are basically one piece can go into holes behind the top door gaskets. If you have separate bars and posts they have to clamp on. Still okay, but the Saab ones are easier to deal with.
