I'd offer an opposing viewpoint, at least where head-in-place chain replacements are concerned. Easier and (a tiny bit) less risky to remove the sprockets, if only due to the fact that the cam bearing bolts are channeled and must be properly aligned on reassembly for proper oil flow.
I personally prefer not to disturb them unless absolutely necessary. Of course in the case of a head gasket job, it's great advice to remove the cams as a matter of course to protect the valves.
Even when removing the head I've always removed the sprockets to remove the chain, but then I've never found a sprocket unwilling to come free.
