Unless you can guarantee that the bolt is sufficiently long to get a firm grip (sufficient number of threads) into the relatively soft aluminum head, but short enough that it won't bottom out, one should stick with studs.
Perhaps this idea could work if you cut the head off of an M8 stainless steel bolt and clean up the end? I need to think about this as I have at least two broken (long) studs, it's only a matter of time before I have to do something about it.
