I've been suspecting the thermostat too, but haven't gotten it changed yet, because the housing bolts are seized.
I've been putting it off until Easter, where I'm visiting a friend who has a shop, where my old 9000 is stored. The old car was extensively upgraded and has a new radiator, but was retired because of rust.
I'll change the thermostat and swap radiators then.
With NTC sensor I meant the one the ECU uses - located just under the intake between cylinder 3 & 4. All the newer engines in the 9000 use the same coolant sensors as far as I've been able to find. Also the temps from the OBD reader doesn't appear to have changed with the new sensor.
I haven't changed the EDU sensor on the side of the engine, because the gauge hasn't behaved weirdly. In fact, it's at 8-9 o'clock, even with coolant temp at 230 fahrenheit.
