Overheating woes...

78 99T, just replaced the elusive waterpump (yes I had the right Saab tool!) because it was leaking oil out of the "weep" hole. The car use to run warm, but not hot. Now the temperature just climbs until it gets to red. I checked that the pump was rotating (when I had the cover off, so I know it is engaged and in all the way). I checked the fan it's working ok (grounded the wire on the thermo swith) and "burped" the cooling system when I filled it up. My question is should the fans go on when it gets midway between N and Hot? mine don't seem to until I shut the car off or it gets very hot. How can I test the thermostat? (I belive it's ok, since the system "burped" i.e water rises and falls in the resevoir as the engine runs). Anything else I should check? thanks in advance,
