The gasket thickness and your installation are critical in a properly operating pump. When I did the pump on my '80 GLi in March I got the pump installed and when I got to the part where you have to press the impeller on I did it in very small increments. I smeared some grease around the inside of the water pump cover and after every increment of pushing the impeller on I would put the cover on and check for contact. When the impellor is off by a long distance its obvious because you can hear it hit the cover, but as you get the impellor pushed on more you have to check for marks in the grease. When the impeller was very close to the cover but would not actually touch the cover (just make a small mark in the grease) I cleaned the grease out and fit the cover on using Loctite 518 as a sealant instead of a thick gasket.
You could try removing your cover and gasket, smearing some grease inside the cover, and re-fitting to check the clearance. If you don't have contact you could then re-fit the cover using Loctite 518 instead of a gasket. You may still have a lot of clearance though.
My car has 280+/-10K miles, a recent radiator (within the past few years),and a new water pump (seals and bearings only) and the temp guage hardly ever gets more than a little past "N".
