I'd pay them to do the strut mount, that job involves compressing the spring and I'll gladly pay someone else to risk their hands/arms with that job. My dealer charged ~$125 to replace both my front struts, so labor isn't too bad. If you have more than ~60k on the struts you might want to replace them at the same time and save the extra labor charge.
As far as the brakes go, dive in! Sounds like you're well experienced in that area, and the Saab brakes are fairly easy to do. The rear calipers do go bad, especially if you're in a climate where they salt the roads. I had to replace one rear caliper at ~65k and now have to replace the other at 115k. Rear calipers range from $80 to $150. I'd be surprised if you really need front calipers though. If your rotors have even wear patterns, inside and outside, then you probably don't need to replace the calipers. When a caliper is frozen, the pad(s) don't move, so the rotor will be rusty on that side.
You know the 'underscore' is actually the "_", don't you?
