When my old turbocharged Audi suffered from bucking under boost it was definitely spark plugs. Make sure you've got the right type with the right gap.
Check the turbo bypass valve to make sure it isn't intermittently leaking. Other turbo hoses too; sometimes they have cracks which can open up under boost pressure conditions, but remain closed during idle/light throttle (high vacuum). On the Audi, I used to pressurize the intake system with a few PSI of air and listen for any leaking.
Check the purge valve plumbing to make sure it's OK.
Someone else mentioned fuel. Maybe your pump is on the way out. Not a cheap fix, so you don't want to just replace it on a hunch.
