Generally speaking, Bilsteins have a higher compression force compared to Konis. This allows more force to be transmitted to the vehicle structure. I have Bilsteins ontwo cars, Konis on the other. Even though this isn't an apples to apples comparision, I will say that the higher compression force is noticable when hitting larger road irregularities. On basically smooth roads, I would say that the ride is similar.
I think the adjustability was originally to make up for shock performance degredation as they wear. The marketing and performance spin is that you can ADJUST the amount of damping to suit your tastes.
