Here are a few basic car washing tips (which it sounds like you've got a handle on):
1. Do not wash when the car is too hot to touch. Park it someplace and let it cool down first.
2. Use only soaps and shampoos made for car washing. Leave the household detergents under the sink. A bottle of car wash shampoo from a name brand like Meguiars, Mothers or Eagle One is about $5.00.
3. Use soft mitts. If you wouldn't rub it on your skin, don't use it on your car. A new car wash mitt costs about $5.00, lambswool a little more. I recommend using two, one for the top half and one for the bottom.
4. If it's a hot day, wash and rinse in small sections. Do not let soapy suds dry on the car.
5. Take your time and do a good job. There are no bonus points for doing it super fast.
6. Use a wheel cleaner and a soft brush if your wheels are covered in brake dust. You can clean your wheels and tires while saving your wash mitt at the same time. A great wheel cleaner is Eagle One All Wheel and Tire Cleaner, available at most auto parts stores for about $5.00.

You're right about the thin coats, there is no benefit to applying wax thickly. All you'll do is wear out your arm and waste product. A second coat doesn't double the protection but it does help even out the shine and protection on the areas you may have missed. Any more than two coats and you're doing this for fun and games.
