Have you tried the taste of extra virgin olive oil? It's great because of its aromatic and peppery components. Very good when matched with certaing things like a nice loaf of crusty bread, a simple arugula salad, or sauteed kale with a simple squeeze of lemon.
But that doesn't mean it's good with everything else. For example, it won't work with a steamed sea bass drizzled with soy sauce and covered with a small nest of fresh scallions and thai bird chilies. The most fantastic part of this dish is flashing the fish and herbs with oil. MOst certainly you cannot use extra virgin olive oil. The oil's flavor cripples the delicate nature of the fish.
And what about something as wonderful as a rib eye steak seared in a hot skillet. There's no way I'm using extra virgin olive oil. Not the right smoking point, and the flavor of the oil gets in the way of the beef.
