I used to brew my own, cracked my own malt, did my own mash and hop boiler etc. Made some damm great beer! But such beers are very much more alive than a kit beer in many ways. The early fermentation can create cubic feet of foam and that little bubbler trap becomes a foam dispenser. So the floor gets covered in a sticky mess. You can clean it up on a non porous surface. A basement floor might absorb the yeast and sugars and might present a lingering smell over time.
So I was banished from the kitchen after a while then the next house did not have sinks etc in the basement and that was the end of my brewing. I sold my home made boiler and other gear.
Kit beer does not age and it looses its body in time as its sugars all break down in the bottle. I have had good scratch beer taste great and have a full body after 10 years. I have some 17 year old beer still that needs to be sampled or tossed at this point :)
