and since its 1/2 hour before I leave for thanksgiving, being of Italian descent, it pains me to see people using bottled "tomato sauce". First, one of the main ingredients is high fructose corn syrup -- a filler that costs them less than nothing. Second, it doesn't go bad b/c of all the additives and preservatives. Think of it like ketchup, same thing and essentially the same ingredients in different portions, it doesn't go bad either. Third, they use powdered ingredients, like onion, garlic, so you don't get the freshness of the veggies.
In answer to your last question, yes, tomatoes are magic.
Why the rant? in the time it takes you to open a bottle and heat it up, you could have made a simple tomato sauce of your own from canned tomatoes (look for whole "san marzano" tomatoes, imported). Heat up oil (1 minute). Add crushed garlic -- 1 minute (they sell it in jars now, even easier and less mess). Sautee optional ingredients -- 2-3 minutes(options include red pepper flakes, a few anchovies, chopped carrots, onions and/or celery). Pour the canned tomatoes into the mix, heat, then cut/crush them with a fork or knife - 5 minutes(or you can buy crushed tomatoes).
My new favorite? Add one can of tuna packed in water, and a handful of frozen peas and heat them up. The whole mess should take you no more than 15 minutes, during which time you are cooking your pasta (try it with rotini) on the other burner.
