I use my grandma Vita's bread recipe, just instead of bread I make pizza dough, not the round kind, though, as I will explain. It's basic old school bread: flour, lard (crisco, the white pasty stuff) and water, pinch of salt, and of course yeast. I sometimes substitute some (but not all) olive oil for the lard to make it more of a heavier dough, I forget what they call that kind of bread.
Put it in a "cake" tin, the rectancgle kind, for the last rising (greased and flour the tin with corn flour). Once its risen almost to the top, dimple the top, then put olive oil in a thin layer, crushed tomatoes (not a lot, just to cover, the water will dry off), salt and pepper (fresh cracked, my friend), dried romano/parmesan (just a taste 3-4 tablespoons, not goobered on like at a pizza joint), and just a little dried oregano. It's "pizza bread" the old fashioned way, makes a great bread to go with pasta, or cut it into chunks and put it out for a party, with marinara for dipping.
Or do the same thing, but make the dough into like 6" rounds for individual servings, and don't let it rise so much the last time. Its more of a bread/tomato experience than it is a traditional pizza.
Of course, put your basic options on if you feel like it, like sauteee'd onions, basil, fresh sliced tomato, whatever.
Mike
